The last time we spent a week on a tropical island was in Micronesia 8 years ago. Hard to believe, Rachel and I just aren’t the “relaxing vacation” type.

But when it came to taking our “Babymoon” during the end of Rachel’s second trimester, the beach was calling, and it landed us on Fiji. A quick, 12 hour non-stop flight from Los Angeles, we decided to spend two nights on Nadi, the main island, before venturing into the sunset west towards a more remote destination.

Sofitel on Denarau island was our choice. March is the low season in Fiji, which means tropical rains in the afternoon and lighter crowds everywhere… a win-win in our opinion.

After arriving to Nadi at 6am and spending an hour in customs, we were checked in, unpacked, and lounging by the pool soaking up the late morning sun. Paradise, and we knew it, would only get better.

Right when I thought the moment couldn’t get any better, lunch menus arrived, and I was greeted by the warm description of Sofitel’s Ultimate Club Sandwich. Boasting a mix of creative ingredients that beckoned my taste buds.

Herbed garlic loaf and French toast with mustard egg cream, BLT, smoked Chicken breast, onion marmalade, and melted Swiss cheese, served with chips.

Healthy? No. But we didn’t choose this vacation to lose weight.

Chunky, smoked chicken breast was flavorful and moist. I loved the use of British-styled bacon rashers vs strip bacon as it gave this club sandwich a better ratio of ingredients. Really enjoyed the mustard egg cream, which wasn’t as pungent (in a good way) as the name might suggest. The onion marmalade, a great touch, but too sparsely added. The produce was a plus, but the bread, that was the slight letdown; as wonderful as it may have been, it wasn’t really herbed garlic loaf and/or French toast. Delicious overall, but missing a few key touches.

I enjoyed the sweeter ketchup and well done French fries, and we decided to lounge by the pool for the rest of the afternoon… until the rains came!
